Ingredients

- Beef steak (undercut) 400 g
- Potatoes 3 medium
- Green beans 200 g
- Garlic 4 cloves
- Butter 20 g
- Olive oil 1 tbsp
- Black pepper 1 tsp

Heavy frying pan (iron is best), Tongs, Baking tray, Small pot (beans), Foil

Roast the potatoes 25 min
Heat the oven to 220°C. Cube the potatoes, toss with oil, salt and pepper and roast.
Ready when: Crisp and golden on the outside.

Dry and season the steak 4 min
Pat the steak completely dry with kitchen paper, then salt both sides. Wet meat steams instead of browning.
Ready when: Surface is dry to the touch.

Sear hard 6 min
Get the pan very hot, add oil and lay the steak down away from you. Do not move it.
Ready when: A deep brown crust forms — it should smell nutty, not burnt.

Butter baste 4 min
Turn the steak, lower the heat, add butter and crushed garlic, and spoon the foaming butter over the steak.
Ready when: For medium the middle feels springy, like the base of your thumb.

Rest under foil 6 min
Move the steak to a board, cover loosely with foil and leave it. This step is what makes it juicy.
Ready when: A little juice on the board, meat relaxed.

Beans and slice 6 min
Boil the green beans 4 minutes, then slice the steak against the grain and serve everything together.
Ready when: Slices are tender, not stringy.
