Ingredients
For 4 servings.
- Chicken breast 600 g
- Couscous 240 g
- Yogurt 150 g
- Broccoli 200 g
- Bell pepper 1
- Tomatoes 2 small
- Lemons 1
- Olive oil 2 tbsp
- Garlic 3 cloves
- Fresh mint ¼ bunch

Heat the oven 2 min
Turn the oven on to 220°C (200°C fan). Line a baking tray with foil or baking paper.
Ready when: The oven light shows it has reached temperature.

Marinate the chicken 10 min
Slice the chicken breasts in half through the side so they are an even thickness. Mix with grated garlic, the zest of the lemon, half the olive oil, salt and pepper. Leave for 10 minutes.
Ready when: Every piece is coated.

Roast the vegetables 18 min
Cut the broccoli into small florets and the pepper into strips. Toss on the tray with the rest of the oil and a pinch of salt. Roast, turning once halfway.
Ready when: Edges are browned and a knife goes into the broccoli easily.

Grill the chicken 12 min
Heat the grill pan on medium-high. Cook the chicken without moving it for 5–6 minutes, then turn and cook the other side for 5–6 minutes.
Ready when: The thickest part is white all the way through with clear juices.

Make the couscous 6 min
Put the couscous in a bowl with a pinch of salt. Pour over the same volume of boiling water, cover and leave for 5 minutes. Fluff with a fork and stir in lemon juice and chopped mint.
Ready when: All the water is absorbed and the grains are separate.

Rest, slice and serve 5 min
Let the chicken rest for 3 minutes, then slice. Season the yogurt with salt. Fill bowls with couscous, vegetables, chopped tomatoes and chicken, and add a spoon of yogurt on top.
Ready when: Bowls are filled and still warm.
